More Guacamole, Please!


We've been making a ton of guacamole. I love that all you need to make really great guacamole is a ripe avocado-- no cooking required. This is a great afternoon snack for kids, a way to spice up a turkey sandwich or wrap, and always good with Mexican food. Here's how I make it: 
  1. Wash and cut avocados in half. Slice lengthwise before you scoop out the flesh for easier mashing. 
  2. Scoop into a bowl (easy, right?).
  3. Add cumin, garlic powder, onion powder (about 1/4 teaspoon of each per avocado), salt to taste, and a dollop of your favorite salsa.
  4. Mix and mash to desired consistency. Enjoy! 
Variations: Add a dollop of sour cream to make it richer and creamier. Try adding a squirt of lime juice. Use real minced garlic instead of garlic powder, but don't go overboard because it's not getting cooked!

Extra: The combo of cumin, garlic powder and onion powder also works amazingly well to season canned black beans that can be used as a side dish or as quesadilla or burrito filling.
