Easy Chilaquiles Hack
The pantry is empty
There is not one single vegetable in the drawer. The last tomato is too wrinkly to eat. The fruit is gone. We haven't gone grocery shopping yet... but there IS some leftover taco meat. If you're out of most food, you can probably still make this. AND, it only takes about 7 minutes to prepare.
Easy Chilaquiles Hack
Ingredients
- leftover taco meat
- eggs
- salsa
- tortilla chips
Directions
- Warm up meat in a skillet over medium heat.
- Beat eggs and add to skillet-- scramble with meat.
- When eggs are mostly cooked, spoon 2 tbsp. salsa on top.
- Immediately add chips to skillet and toss with salsa and egg mixture. Leave chips in until desired level of crispness/sogginess is achieved. Remove from heat so eggs don't get overcooked.
- For the ultimate chilaquiles experience (if your pantry isn't empty and you can eat dairy), top with sour cream, diced tomato, sliced avocado, lots of sharp cheddar cheese or queso fresco, and some iceberg lettuce shreds. Buen provecho. That's Spanish for "bon appetit."
