Quick & Easy Apple Crisp

Now that you've gone to the apple orchard and captured all those perfect shots of tiny fingers reaching for an apple (that may not have actually detached from the branch because it wasn't ripe), what are you going to do with all those apples? Make an apple crisp! 


Got this cookbook when I got married from my friend Julie Simpson. If you're looking for a solid cookbook that you can rely on for basically everything, I recommend this one, or the newest version of this one. 

Caroline helped me make this crisp. She helped turn the crank on the apple peeler/corer. She scooped the sugar, and she even got a turn with the pastry blender. If you don't have tools like a peeler/corer or a pastry blender, you can still make this recipe. It just might take a bit longer. You can use two knives to cut in the butter instead of a pastry blender. Here's a video

First, prepare the apples by washing, peeling, coring, and slicing the apples. Toss with a little sugar. Then, make the topping with oats, brown sugar, cinnamon or other spices (I toss in a little ginger). Cut in the butter (or Smart Balance or equivalent). Pour the topping on top of the apples and bake. Click on the recipe link for the details on quantities. It's a super simple crisp, and you can also make it with different fruits. 


I forgot to take one of the finished crisp before we ate it : ) But, it was delicious.
